Need some kind of ebook creator that will setup layout easily so I can just type in the text I have prepared and perhaps add some images. Either a program or templates for Acrobat Writer will do. Any ideas people?

Try GhostScript to create PDF ebooks.
You can write your ebook using Word or any other word processor and then print using GhostScript.
